Thank you to all our customers that joined us last night for ladies nite! several people asked for the recipe for the coconut balls so here it is. And I hope to hear back from any of you about how to improve for our future events!
These are called 'Skillet Cookies' (i think they need a better name!)
1 stick butter
1 cup sugar
1 egg
1 box or bag of chopped dates
1 cup pecans
2 cups rice krispies
1 tsp vanilla
Place butter, sugar,egg and chopped dates in a pan and cook for 5 minutes or until dates are dissolved. Remove from heat, add vanilla, rice crispies and pecans. When cool enough to handle, roll in coconut after shaping it into a small log shaped or round cookies.
Someone last nite said their grandmother had a similar recipe using powdered sugar, which i would to try. And someone said the wassail had too much rum(1/2 cup) and another said they could not taste the rum..... oh well! We did set off a wish lantern about 8 oclock, and they are so pretty when they go up, but gotta watch, don't do it when it's windy and make sure you hold onto it for a bit longer than you think necessary, then it will go up better.
